Originally released in a kit form called LEVEL² TD™ for white wines, Lallemand have now launched this product as a single product, whereby winemakers can select a paired Saccharomyces cerevisiae strain to complement the T.delbueckii in both red and white wines. LEVEL² BIODIVA™ ,Torulaspora delbrueckii, tends to enhance varietal and fermentation ester characters whilst contributing mouthfeel.
