The keys to creative and daring exploration
We explore and understand microbial diversity to select and study indigenous yeast and bacteria of interest. We are motivated by finding solutions for winemakers to support them in optimising their wine quality and helping wine show a sense of style and a sense of place, but also to mitigate the impact of climate change, to reduce the use of chemicals in winemaking with bioprotection solutions and to answer to market demands (organic wines, low SO2 wines, lower chemicals, wine transport optimisation).
