Lallemand Oenology, the Lallemand expert brand for wine fermentation, develops wine yeasts and wine bacteria, but also nutrients and yeast protectors, specific yeast derivatives, chitosan-based products and enzymes.
For us, microbiology is much more than a science, it is an exploratory art improving vine condition, controlling winemaking process and optimising wine quality. Our complete range of innovative and natural solutions can also be used in bioprotection strategies, reducing the use of chemicals, with the objective of a clean label wine and can be relevant to mitigate the effects of climate change.

Since the 70’s, Lallemand Oenology has been exploring the biodiversity selecting micro-organisms in different fermenting musts and terroirs focusing on the phenotypes and yeast and bacteria metabolism to reveal and maximize the grape’s full potential. These selections are fully and precisely characterised, and understanding their potential is part of our “savoir-faire”. This know-how also applies to cider, fruit alcohols and hard seltzer.
