The use of our fungal chitosan shows great potential in the control of spoilage microorganisms and secures wine quality. Our vegetal chitosan is 100% fungal origin from Aspergillus niger, and produced in Europe.

Lallemand Oenology offers a range of fungal biopolymers that are natural and pure in origin, derived from chitin (chitosan and chitin-glucan).

We have a long-term exclusive partnership with a company that produces specific fungal chitin derivatives in Europe. Their patented innovative production process guarantees the purity and source of the raw material confirming its 100% fungal origin from Aspergillus niger.

Lallemand Oenology has developed vegetal chitosan-based products of natural origin (NO BRETT INSIDE™ and BACTILESS™) that can help control the development of those contaminating microorganisms. Our vegetal chitosan is 100% fungal origin from Aspergillus niger.

Both products can also be used in a SO2 reduction strategy during winemaking.
