Proceedings of the XXVIth Entretiens Scientifiques Lallemand held in Osoyoos, Canada focused on understanding that microbiological diversity is essential for controlling the production of quality wine.  Topics presented included the diversity of microbial populations in the vineyard and in winery fermentations.
