ENOFERM RP15™ was selected from a spontaneous Rockpile Syrah fermentation. This Californian isolate is used in concentrated reds, particularly Shiraz, Zinfandel, Cabernet Sauvignon and Merlot where a moderate fermentation rate is desired for rich, lush, balanced mouthfeel and full bodied wines. ENOFERM RP15™ has a moderate nitrogen demand and contributes to varietal flavour, red fruit and mineral notes.
